Zesty Gazpacho

Perfect for warmer weather, lighter meals, snacks, or raw cleanses, gazpacho is super easy to throw together and very forgiving – meaning that you can add a little less of this or a little more of that and still end up with a delicious bowl of garden freshness.

As always, hot pepper is optional according to taste preference and heat tolerance. I recommend to always taste test your hot pepper first and add it sparingly if you are sensitive to heat. In lieu of the chile pepper, you can add a sprinkle of cayenne pepper.

Ingredients

2 large ripe tomatoes
1/2 medium cucumber
1 garlic clove
1/4 medium onion
¼ – ½ ripe jalepeno pepper or red chile pepper (if you like heat)
Juice of ½ lemon
1 tsp onion granules
1/4  tsp. salt (optional)
A few basil leaves

Method

Roughly chop all vegetables and place in a food processor. Pulse until mostly pureed, but with some texture remaining. Add lemon and salt, if using. Chop or tear a few basil leaves and sprinkle over each bowl. Serves 2-4, depending on serving size used.
